
In a large saucepot, add 1 Tbsp of coconut oil and sweat the onion with the spices over low-medium heat. It should take 3-4 minutes and the onion will be soft and translucent when it's done.
Season with salt and stir well. Remove from the heat.
Adjust seasoning. Squeeze a little fresh lime in. Serve with chopped cilantro or parsley, as well as an extra dollop of coconut milk on top.
