Fresh Green Tomato Salsa

Enjoy this easy, quick and fresh salsa with green tomatoes, red tomatoes, parsley, lime, and garlic. Full of summer garden flavour and perfect for all your favourite meals and snacks.

Ingredients

  • 1 garlic clove minced
  • 1 small, handful of fresh parsley
  • 1 large lime juice only
  • 2 medium, ripe red tomatoes about 240 g
  • ripe tomatillos (or green tomatoes) about 750 g
  • 3 tablespoons high-quality olive oil
  • 3-6 tablespoons apple cider vinegar taste and see how you like it after 3 Tbsp; I like it really tangy and acidic
  • 1/4 teaspoon ground cayenne for a bit of kick - you can also use some fresh hot peppers of your choice
  • 1 teaspoon ground cumin
  • sea salt to taste (I use about 2 1/2 tsp)

Instructions

  1. Chop all ingredients by hand and mix together. Or, for a faster but finer and smoother texture, combine all ingredients in a food processor. Pulse a few times until you are satisfied with the texture.

  2. Enjoy this fresh salsa in every which way.

Serve this salsa with green tomatoes with fresh veggies, homemade crackers or kale chips.
