Red and Green Salsa (with Tomatillos & Tomatoes)
cups or 1000 ml
small handful of fresh parsley
Juice of 1 large lime
about 240 g, ripe tomatoes
about 750 g
of high-quality olive oil
of apple cider vinegar
or less; taste and see how you like it after 3; I like it really tangy and acidic
of sea salt
more or less to taste - your call
for a bit of kick - you can also use hot peppers of your choice
of ground cumin
Chop all ingredients by hand and mix together. Or, for a faster but finer and smoother texture, combine all ingredients in a food processor and pulse until you are satisfied with the texture.
