I regularly work as a chef in-home and on-site for private events, parties and special gatherings, and I specialize in healthy yet full-of-flavour food. And I wholeheartedly believe in having your cake and eating it too!

My food philosophy is creative, thoughtful and thoroughly influenced by the seasons.

As a Registered Holistic Nutritionist, I am trained to navigate all special diets from Paleo to raw to vegan, as well as food allergies and/or food intolerances. I am also an experienced recipe developer and I am skilled at creating gourmet dairy-free, gluten-free, grain-free, sugar-free, soy-free, egg-free, corn-free, etc. menus.

 

My services usually include:

  • Complete menu development for all courses
  • All food planning and shopping, unless otherwise specified
  • All food preparation before and during your event
  • All food cooking and plating during your event

 

I typically work independently or as part of a small team, but I am open to collaborating on a larger team for larger events.

I live in Orillia, Ontario, and I regularly work in Barrie, Ontario, throughout the Simcoe County region, and also often in the cottage country/Muskoka areas. I also adore and am open to travelling, especially for work and for the right project!

In case you're wondering what a bushel of Thai Basil looks like! 😍

My Italian mother-in-law asked me if I wanted some basil a week ago. We finally made it to their place... I was expecting a plant or two. So I wasn't equipped with much to bring it home in. From past experience, I should have known it would be a generous offering!

The 12 eggplants she packed in my car should have been my first clue 🤪

In the middle of heavy rain, with thunder and lightning... I'm in rubber boots with a rain jacket (that I keep in my car for emergencies) and a borrowed umbrella. My almost 80-year-old MIL is in the same.

We make it out to the field where the basil is. She says she already harvested what she needed, so take what I like. I harvested about 4 feet of the row and figured that was enough.

I've learned that that's her version of "mangia mangia"... and you can't really say no to that. So we kept picking basil... and picking and picking... while the rain fell and thunder filled the sky. And so we filled the entire bushel basket AND a reusable bag. And that's how I came to have enough Thai Basil to last me the rest of the century 🤣 Here's what I did with it... Washed, dried and then: 🌱 chopped enough basil in the food processor to fill a few ice cube trays and then topped with water 🌱 chopped enough basil in the food processor to fill a few ice cube trays and then topped with olive oil 🌱 packed full leaves of basil into 4 medium freezer bags, labelled & removed the air 🌱 wrapped 7 large bouquets of Thai Basil, hung them on the laundry rack outside until the rain washed the soil off and now they're drying in my shed. In a week or two, they'll be dry and crumbly and ready for soups, marinades, stews, and all the winter comfort foods. Do you have a favourite basil recipe for me???
