I regularly work as a chef in-home and on-site for private events, parties and special gatherings, and I specialize in healthy yet full-of-flavour food. And I wholeheartedly believe in having your cake and eating it too!

My food philosophy is creative, thoughtful and thoroughly influenced by the seasons.

As a Registered Holistic Nutritionist, I am trained to navigate all special diets from Paleo to raw to vegan, as well as food allergies and/or food intolerances. I am also an experienced recipe developer and I am skilled at creating gourmet dairy-free, gluten-free, grain-free, sugar-free, soy-free, egg-free, corn-free, etc. menus.

 

My services usually include:

  • Complete menu development for all courses
  • All food planning and shopping, unless otherwise specified
  • All food preparation before and during your event
  • All food cooking and plating during your event

 

I typically work independently or as part of a small team, but I am open to collaborating on a larger team for larger events.

I live in Orillia, Ontario, and I regularly work in Barrie, Ontario, throughout the Simcoe County region, and also often in the cottage country/Muskoka areas. I also adore and am open to travelling, especially for work and for the right project!

There's nothing I love more than a make-it-once, eat-it-all-week meal. Anyone else?? I was inspired by @ohsheglows recipe for her Cozy At Home Spicy Any-Veggie Soup and came up with this little variation. Extra hearty, flavourful and endlessly adaptable.

It was a clean out the fridge situation! Here's what went into it...
.
🥒Leeks
🍈Cauliflower (about 1.5 cups, in small florets)
🥔Parsnip (about 1.5 cups, large dice - this was a gift from the garden... someone planted it 2+ years ago and somehow it survived and thrived. I accidentally dug it up doing garden bed prep!)
🌽dry multicoloured quinoa (about 1 cup)
🍡spices of turrmeric, black pepper, Chile powder, cumin (and lots of sea salt since my stock was unsalted!)
🍖usually I would use lentils in this soup but I had 3 small leftover pork sausages that my Italian father-in-law made
🍅1 x 28 oz. can of diced tomatoes
🍗1 litre of homemade chicken stock
🥒1 small zucchini (large dice)
 and
🍑1/3 cup full-fat coconut milk.

I added the leeks, quinoa, and hard veggies first, tomatoes, stock, spices... simmer until soft. Then added the sausage and zucchini for about 8 minutes at the end so it's just tender and not mushy 😝). Took the pot off the heat and gently stirred in the coconut milk. Adding a bit of coconut milk right at the end makes tomato-based soups and stews so luxurious, creamy and just a touch sweet to balance the acidity of the tomatoes. .

Sounds complicated when I type it all out, but it's truly simple and easy to put together. Swap in any veggies you have and keep it in your back pocket for a cool, rainy, spring night!

Did you know that we have more bacteria than cells in our bodies? On average, we have about 100 trillion bacteria compared to about 50 to 100 trillion cells! Most of these bacteria are also beneficial (or at least neutral) and help support digestive function and a well functioning immune system. And fermented foods are a great way to get more of them!

A year ago, this is what I was having for #lunch. I was in Arizona for a Flower Essences Practitioner training and eating in my hotel room (truthfully trading the 40+ degree heat for AC!). But even at almost 6 months pregnant, I was still nauseous much of the time and craving ALLLL the sour things. So, fermented veggies to the rescue!

I pulled this together from @traderjoes and kept the leftovers in my hotel fridge. Lactofermented beets, sauerkraut, guac (best in the southwest!), baked salmon, cucumber, and boiled eggs.
.
.
On top of successfully fulfilling pregnancy cravings, fermented foods seemed to help my morning (all-day) sickness, so I was eating my fair share.

.
Even though many of us are stuck/safe at home these days, this is just an example of how we can still eat well at home, at work, or on the go, with minimal effort. And fermented foods are a great way to boost flavour and health at the same time!
